So what is New California cuisine?

New California cuisine is marked by an interest in "fusion" — integrating disparate cooking styles and ingredients — and which, influenced by the state's health-conscious tradition, tends to be freshly prepared. The food is typically prepared with strong attention to presentation. California cuisine is not bound by one certain group of menu items but represents a little of everything. It's all about natural goodness, freshness, and lots of fruits and vegetables. From vinaigrettes to sea bass to crab cakes to couscous to enoki mushroom, it is a spectrum of international food cooked right on the premises. Group Executive Chef Lee Kin Pong believes that California cuisine is very ingredient driven and most of it relies heavily on the quality of the products.
